Local business spotlight: paul.a.young

This month we caught up with Paul Young, award winning chocolatier and founder of paul.a.young fine chocolates.
Who are you?
My name is Paul A. Young; I’m a UK based Chocolatier with three boutique stores across London. At my company, paul.a.young fine chocolates, we focus on crafting delicious and interesting chocolates using the world’s best ingredients, always made in a truly artisanal way.
How long have you been in Islington and what do you value about this area?
My Camden Passage store in Islington was my very first chocolate shop. We’ve now been here for 11 years and we continue to love the area. The people and shops are so vibrant and the feeling of community is what we really value.
What inspired your business, and where do you get inspiration for your recipes?
I’ve always loved chocolate, right from when I was a young whipper-snapper helping my Grandma in the kitchen. She taught me a real passion for ingredients and making things with love. When I worked in the kitchen at Marco Pierre White, I was Head Pastry Chef and this really ignited my passion of turning my love into an actual business, From there it was all natural progression!
Do you have a top chocolate flavour this season?
My favourite chocolate right now is a California prune molasses, with Guittard white chocolate, toasted almonds, rose petals and essential rose oil.
What’s a favourite theatre production you’ve seen recently?
I absolutely loved Book of Mormon!
